A JPG stores a photo as compressed pixels, so any text in it is part of the picture — you can’t select it. Converting a JPG to text means running OCR over the image to recognise those characters and output them as editable text. JPG uses lossy compression, which can soften fine detail — so for crisp screenshots a PNG often reads slightly better.
